As some of you know, most of the cookie recipes I create are inspired by my favorite foods and drinks. 🥰 A few weeks ago, my husband and I were discussing cakes we loved and he mentioned the scrumptious, homemade, carrot cake one of my good friends makes. 🥕🍰😋 Long story short, I was instantly inspired! 🤩 Introducing my latest cookie creation: Bake Sale Carrot Cake 🥕🧡! This new cookie is actually 2 flavors in one. 😊 Made with real cream cheese powder, organic eggs 🥚, cane sugar, and lots of real butter 🧈, the top layer is the “icing.” Under the cream cheese “icing” is the “cake,” made with organic rainbow carrots 🌈🥕, raw walnuts, unsalted butter 🧈, brown cane sugar, organic eggs 🥚, cinnamon, pure vanilla extract, and a dash of sea salt. 🧂 I’m so grateful I was able to finalize my recipes for these crispy-chewy cookies in time for the Spring holidays. 🌸 They’d make a tasty surprise from the Easter Bunny 🐇, be a yummy addition to any family gathering 🐣, could easily be the dessert for your holiday meals, and/or make a delicious night-before-meal-prep treat. 🌼 Get on my Spring baking schedule now! 😃 I can’t wait to bake these cookies for you. 👩‍🍳🥕🍪
